Nonya Kueh Lapis


Nonya Kueh Lapis














Kueh Lapis Ingredient:
1. 800 g.coconut (grated)
2. 650 ml water (for squeezing coconut)
3. 400 g rice flour
4. 280 g sago flour
5. 1/2 tsp salt
6. 550 g granulated sugar
7. 10 screwpine/pandan leaves
8. 350 ml water
9. a dash of red and orange food colouring

Kueh Lapis Method Step By Step:
1. Squeeze the grated coconut with 650 ml water. Top up with more water to get 950 ml.

2. Mix the rice flour, sago flour and salt in a bowl. Pour in the coconut milk, a little at a time to get a smooth dough.

3. Boil the sugar and screwpine leaves in 350 ml water for 10 minutes. Strain the syrup, and add in extra hot water to get 450 ml.

4. Add the syrup to the flour mixture. Stir till well blended.

5. Divide the mixture into 3 portions. Add red and orange food colouring to two portions.

6. Grease a baking tin. Place it in a steamer with boiling water.

7. When tin is hot, pour a layer of the coloured mixture into it. Steam for about 5-8 minutes. Pour some of the uncoloured mixture on top and steam again. Repeat for the next coloured mixture. Continue till all the mixture is used up.

8. When all of the mixture is used up, remove tin from steamer and let kuih cool for 8 hours.

9. To serve, cut kuih lapis into slices.

Nonya Kueh Bingka Ingredient:
1. 300 g wet glutinous rice flour/ tepung pulut basah
2. 200 ml thick coconut milk
3. 200 g grated coconut (white part)
4. 1/4 tsp salt
5. 150 g sugar
6. 2 eggs (beaten)

Nonya Kueh Bingka Method Step By Step:
1. Combine all ingredients, except eggs, in a saucepan. Stir well.

2. Bring mixture to the boil. Continue stirring until the mixture thickens.

3. Add in the beaten eggs; combine mixture well.

4. Grease a baking tin and put kuih mixture into it.

5. Pre-heat oven to 160°C. Bake kuih for 45 minutes.

6. Remove from oven. Let kuih cool on a wire rack. To serve, cut kuih into small pieces.

Sultana Cake

Sultana Cake Ingredient:
1.250 g brown sugar
2.5 eggs
3.250 g butter
4.250 g sultanas
5.400 g self-raising flour (sifted)

Sultana Cake ethod Step By Step:
1. Beat sugar, eggs and butter till fluffy.

2. Add in the sultanas and sifted flour. Combine the mixture well.

3. Grease a baking tin and put in the cake mixture.

4. Pre-heat oven to 180°C and bake cake for 1 hour.

5. Remove from oven and leave cake to cool completely. Slice cake and serve.

Fruit Cake

Fruit Cake Ingredient:
1. 250 g butter (melted)
2. 250 g brown sugar
3. 5 eggs
4. 450 g self-raising flour (sifted)
5. 100 g white raisins
6. 100 g dried blackcurrants
7. 100 g red cherries
8. 100 g green cherries
9. 150 g mixed peel
10. grated peel of 1 orange
11. grated peel of 1 lemon
12. 1/2 tsp cinnamon powder
13. 1/4 tsp nutmeg powder

Fruit Cake Method Step By Step:
1. Combine butter, sugar and eggs. Beat till fluffy. Add flour and the remaining ingredients.

2. Preheat oven to 180°C.

3. Grease a baking tin and pour in cake mixture.

4. Bake cake for 45 minutes. Reduce heat to 140°C and bake for another 30 minutes.

5. Remove and leave cake to cool completely on wire rack. Slice cake and serve.

Ang Koo Kueh

Ang Koo Kueh Filling Ingredient:
1. 350 g green peas (soaked for 5 hours, drained and skin peeled)
2. 320 g sugar
3. 750 g glutinous rice/pulut (soaked overnight and ground)
4. 2 tbsp cornflour
5. a dash of red colouring
6. cooking oil (for coating)
7. banana leaves

Ang Koo Kueh Method Step By Step:
1. To prepare filling: Steam green peas for 1 hour; mash peas finely. Mix with sugar and dry-fry -in pan over low heat until almost dry.

2. Drain glutinous rice and grind finely. Put rice into a cheese cloth and squeeze out water.

3. Mix the ground rice, cornflour and red colouring. Knead mixture into a dough.

4. Divide the dough into ang koo moulds and place 1 1/2 teaspoonfuls of the filling.

5. Top the filling with some dough. Repeat process till all dough is used up.

6. Steam kuih for 10 minutes. Remove from steamer and brush kuih with a little oil.

7. Transfer to a serving plate. Cool kuih before serving.

Almond Layered Cake

Almond Layered Cake Ingredient:
1. 300 g butter
2. 200 g brown sugar
3. 6 eggs (separated)
4. 450 g plain flour
5. 200 g almond paste

Almond Layered Cake Method Step By Step:
1. Combine butter, sugar and egg yolks; beat till creamy.

2. Fold in the flour and combine well.

3. Beat egg whites till stiff and fold into dough.

4. Roll out almond paste to a thickness of 1/2 mm. with a rolling pin. Cut into sizes of a square baking tin.

5. Grease a square baking tin and spread 6 tablespoonfuls into the tin.

6. Bake at 160°C for 8 minutes; spread some almond paste onto the baked layer.

7. Spread some cake dough onto the almond paste layer; bake for another 8 minutes. Repeat this process till all the dough and almond paste are used up.

8. Remove cake from oven. Leave cake to stand overnight. Cut into thin slices before serving.

Pandan Cake Ingredient:
1. 8 eggs
2. 200 g castor sugar
3. 1 1/2 tsp pandan essence a dash of green colouring
4. 150 ml thick coconut milk/santan
5. 300 g plain flour (sifted)
6. 3 tbsp baking powder
7. 20 ml corn oil

Pandan Cake Method Step By Step:
1. Separate egg whites and yolks.

2. Beat egg yolks with sugar till creamy.

3. Add in pandan essence, green colouring and coconut milk.

4. Fold in flour and baking powder.

5. Beat egg whites till stiff and mix with the dough.

6. Grease a baking tin with corn oil.

7. Bake cake at 120°C for 1 hour.

8. Remove from oven; allow cake to cool on wire rack in the baking tin.

9. Serve cake with freshly whipped cream and fruit cocktail, if desired.

Nonya Kueh Dadar


Nonya Kueh and Cake Recipes - Nonya Kueh Dadar














Nonya Kueh Dadar Ingredient:
1. 200 g plain flour (sifted)
2. 1 egg
3. 300 ml thin coconut milk
4. a dash of green colouring
5. 100 ml corn oil

Nonya Kueh Dadar Filling Ingredient:
1. 1 coconut (grated white part)
2. 150 g palm sugar/gula melaka (dissolved in 30 ml hot water)
3. 11/2 tbsp sugar

Nonya Kueh Dadar Method Step By Step:
1. Combine half of the coconut milk with flour. Add in the egg, green colouring and corn oil; beat mixture till well-combined.

2. Gradually pour in the remaining coconut milk. Continue beating for 5 minutes.

3. Let batter stand for 30 minutes.

4. Heat up an omelette pan. Pour some batter onto pan.

5. Tilt the pan so that the batter is spread evenly thin. When sides turn dry and brittle, remove kuih.

6. Repeat this process till all the batter has been used up.

7. To prepare filling: Fry the grated coconut till just heated up. Add in the dissolved gula melaka and sugar; stir till mixture is well-blended.

8. When cool, spread 2 teaspoonfuls filling in the middle of the kuih. Roll up kuih and serve.

Kueh Dadar Tip:
Do not grease pan since batter contains oil.

Banana Cake

Banana Cake Ingredient:
1. 4 eggs
2. 250 g butter (melted)
3. 250 g castor sugar
4. 5 ripe bananas (peeled & mashed)
5. 450 g self-raising flour (sifted)

Banana Cake Method Step By Step:
1. Separate egg whites from egg yolks. Beat egg whites until stiff.

2. Cream butter, sugar and egg yolks. Beat till fluffy.

3. Add in the mashed bananas; mix well. Fold in the flour and egg whites.

4. Line a baking tin with greaseproof paper. Pour mixture into tin.

5. Place cake in a cool oven. Bake cake at 160°C for 45 minutes.

6. Remove from oven. Cool cake completely on wire rack. Slice cake and serve.
